5 Simple Recipes to Make the Most of Farm-Fresh Eggs, Honey & Maple Syrup

Good ingredients don't need much help. At Le Capitaine, our farm-fresh eggs, raw unpasteurized honey and pure Quebec maple syrup are pantry staples that turn an everyday meal into something special. Here are five simple recipes that let those flavours shine, no special equipment required.

1. The Perfect Soft-Boiled Egg

Bring a pot of water to a gentle boil, lower in your eggs, and cook for exactly 6 to 6.5 minutes. Plunge into cold water, peel, and season with flaky salt and pepper. With rich, golden yolks like ours, this three-minute breakfast tastes like a treat.

2. Honey-Drizzled Ricotta Toast

Toast thick slices of good bread, spread with fresh ricotta, and finish with a generous drizzle of raw buckwheat or wildflower honey and a pinch of sea salt. Sweet, savoury and ready in five minutes.

3. Fluffy Buckwheat Pancakes

Whisk 1 cup of our pure buckwheat flour with 1 egg, 1 cup of milk, a teaspoon of baking powder and a pinch of salt. Cook in a hot buttered pan and serve stacked high with pure Quebec maple syrup. Naturally gluten-free and wonderfully nutty.

4. Maple-Glazed Roasted Vegetables

Toss carrots, squash or Brussels sprouts with olive oil, salt and 2 tablespoons of maple syrup. Roast at 200C (400F) until caramelized at the edges. The syrup deepens into a rich, savoury-sweet glaze.

5. A Proper French Omelette

Beat 3 eggs with a splash of water. Cook gently in butter over medium-low heat, stirring softly, then fold. Keep it pale and creamy. When your eggs are this fresh, simple is best.
