🍰 Traditional Honey Cake (Lekach)
The iconic New Year cake — moist, spiced, and deeply honeyed. Buckwheat or wildflower honey gives it a rich, memorable depth.
Ingredients
- 1 cup pure honey
- 3 large eggs
- ¾ cup brown sugar
- ½ cup vegetable oil
- 1 cup strong warm tea or coffee
- 3 cups flour
- 1 tsp baking soda + 1 tsp baking powder
- 2 tsp cinnamon, pinch of cloves
Method
- Heat oven to 165°C (325°F). Line a loaf or bundt pan.
- Whisk honey, eggs, sugar, and oil until smooth.
- Stir in the warm tea or coffee.
- Fold in the dry ingredients until just combined.
- Pour in the pan and bake 45–55 min, until a skewer comes out clean.
- Cool, then drizzle with extra honey before serving.
🥕 Honey-Glazed Roasted Carrots
Sweet carrots are a symbolic New Year food. A honey glaze makes them glossy, tender, and irresistible — a perfect savoury way to wish for sweetness.
Ingredients
- 1.5 lb (700 g) carrots, peeled
- 3 tbsp pure honey
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt, pepper, fresh thyme
Method
- Heat oven to 200°C (400°F).
- Cut carrots into sticks; toss with oil, salt and pepper.
- Roast 20 min until starting to caramelise.
- Whisk honey with lemon juice; toss over the carrots.
- Roast 8–10 min more until glossy and tender.
- Finish with fresh thyme and a final honey drizzle.
